This quick and easy Burrito Bowl recipe is ready to eat in 15 minutes. It is also ideal for Meal Prep and can be made for a week of convenient and healthy work meals.
Ingredients
Chicken
- 2 tbsp oil
- 1 boneless Chicken Breast, sliced into strips
- 1 tbsp Roohts Fajita Seasoning
- 1 tbsp Lemon Juice
- 1/2 Red Pepper
- 1/2 Red Onion
Avocado
- 1 Avocado, cubed
- 1/2 Lime, Juice only Salt and Pepper
- Pinch Chilli Flakes
To Serve
- 250g pouch Mexican-style rice
- 2 - 3 tbsp Sour Cream
- 3 tbsp Corn
- Handful Salad and Lettuce
Instructions
Add Oil to a pan over medium heat.
Add Chicken Breast, Fajita Seasoning and Lemon Juice and mix together.
Cook Chicken for 5 - 6 minutes each side.
Add chopped Peppers and Onion and cook for a minute.
Check that the Chicken is cooked through.
Combine chopped Avocado, Lime, Salt and Pepper and Chilli Flakes in a small bowl and mix to combine.
Assemble the Burrito Bowl by dividing the Chicken, Avocado, Rice, Salad and Corn between 2 bowls.
Storage
Chicken Burrito Bowls can be stored in the fridge in air tight containers for up to 5 days.
