Makes 8 mini Tacos
These mini Cajun prawn tacos are full off flavour.
They feature spicy Roohts Cajun seasoned prawns served in soft tortillas and topped with a variety of delicious toppings.
Ingredients
1 pound large Prawns, peeled and deveined
1 tbsp Roohts Cajun seasoning
2 tbsp Olive Oil
Juice of 1/2 Lime
For Taco Assembly
8 mini Tortillas
Optional Toppings - chopped Tomatoes, chopped pickled Jalapenos, Chopped Coriander,
Sliced Red Onions, Guacamole, Sour cream
Instructions
In a bowl, combine the Prawns with Cajun seasoning, Olive oil and Lime Juice.
Heat a large pan over medium-high heat.
Add a drizzle of Oil, and when it's hot, add the marinated prawns.
Cook for 2-3 minutes on each side or until they turn pink and opaque.
Warm the tortillas in a dry pan.
To assemble the Cajun prawn tacos, place a few prawns in the centre of each tortilla.
Top with toppings of your choice.
Variations
Use Cod instead for Fish Tacos.
Storage
Store leftovers in an airtight container for up to 2 days.
Remove toppings before storage so that the tortillas don’t get soggy.
