An easy Chicken Traybake cooked with punchy flavours. This recipe is ideal for busy weekdays.
Ingredients
Marinade
- 1 large Tomato
- ½ Onion
- 6 cloves Garlic
- ¼ bunch Coriander Leaves
- 4 tbsp Olive Oil
- 3 tbsp Plain Greek Yoghurt
- 3 tbsp Tomato Puree
- 2 tbsp Lemon Juice
- 1 tsp Coriander and Cumin Powder Mix
- 1/2 tsp Turmeric Powder
- 1 tsp Smoked Paprika
- 1 tsp Chilli Powder
- 1 tsp Onion Powder
- 1 tsp Salt
Chicken
- 12 Chicken Thighs/Drumsticks mixed
Instructions
Blend all the ingredients for the marinade to gather until smooth.
Place the Chicken on a Baking Tray lined with baking paper.
Rub the marinade into the Chicken and place in the fridge for 1 hour to marinade.
Cook covered at 220 C/Gas Mark 7 for 1 hour - 1 hour 15 minutes.
Variations
Use 3 tbsp of your favourite Roohts Seasoning Mix instead of all the Spices listed.
Add Vegetables like peeled and chopped Sweet Potatoes, Carrots, Peppers to the tray.
Serving Suggestion
Serve with Salad, Rice or Vegetables.
Storage
Store leftovers in an airtight container in the fridge for up to 5 days.
