Serves 4
This soothing Chicken Turmeric Noodle Soup is nourishing and warming, especially during the colder months or when you are feeling under the weather.
Ingredients
- 2 tbsp Sesame Oil
- 3 Spring Onions, chopped,
- 2 cloves Garlic, sliced finely
- Handful Coriander Leaves, chopped
- 3/4 tsp Ground Turmeric
- 1 tbsp Lemon Juice
- 1/3 tsp Chilli Flakes
- 1 tbs Soy Sauce
- 1 cup Chicken Stock
- 1 cup mixed frozen Veg
- 1.5 l Water
- 250g Rice Noodles
- 1/2 Rotisserie Chicken, chopped
- 125ml Coconut Milk
Instructions
Add Sesame Oil to a pot, then stir in chopped Spring Onion, Garlic and Coriander
Leaves and saute for 30 seconds.
Stir in Ground Turmeric, Lemon juice, Chilli Flakes and Soy Sauce.
Add the Stock and mixed Veg and cook for 2 minutes.
Pour in Water and bring to the boil.
Add Noodles and Rotisserie Chicken and cook for 2 minutes.
Pour in Coconut Milk and cook for 2 - 3 minutes.
Variations
Add a sweet and sour element by stirring in some dark brown sugar and tamarind.
Storage
Store in a fridge in an airtight container for up to 3 days.
How to serve
Add Garnishes to the top of the soup in each bowl.
Popular garnishes include fresh herbs like Coriander, thinly sliced Spring Onions, Lime Wedges, a drizzle of crisp Chilli Oil, or Bean Sprouts for crunch.
These garnishes not only enhance the flavour but also make the dish visually appealing.
