These Chicken Parmesan Skewers are an easy and fun recipe for busy days. Whether you're hosting a summer barbecue or looking for a quick weeknight dinner option, chicken skewers are a crowd-pleaser that never disappoints. Ingredients (Serves 4)
Marinade
- 500g Chicken Breast, cut into 1 inch chunks
- 1 tbsp Olive Oil
- 1 tsp Smoked Paprika
- 1 tsp Cayenne Pepper (Adjust according to taste)
- 3/4 tsp Garlic Granules
- 3/4 tsp Onion Powder
- 3/4 tsp Salt
- 1/2 tsp Black Pepper
Butter Baste
- 75g Butter, melted
- 20g Parmesan Cheese, Grated (Or Grana Padana)
- 3 cloves Garlic, crushed
- 1 tsp dry Parsley
- 1/8 tsp Salt
- 1/4 tsp Black Pepper
Other
- Wooden Skewers soaked in water for 30 minutes
Instructions
- Preheat oven to 200 C/390 f/Gas Mark 6.
- Marinade Chicken pieces in all the ingredients listed under marinade for 30 minutes.
- Thread Chicken onto skewers.
- Combine the ingredients for the Butter baste in a small bowl and mix together.
- Place Chicken Skewers into an oven tray.
- Cook for about 15 - 18 minutes or until fully cooked. Turn the chicken often and brush with the Garlic Butter. Once the chicken is golden remove from the oven and brush generously with leftover butter.
Variations
You can use any of the Roohts Seasonings or Recipe Mixes to make these Chicken Skewers.
