This Mediterranean-inspired recipe combines creamy feta cheese with Chickpeas, Red Onions and Tomatoes. It’s an effortless one-pan meal that’s perfect for busy weeknights or casual entertaining. Serve with toasted Pitta Chips for an Easy sharing meal.
Ingredients (Serves 4)
- 1 Red Onion, Sliced
- 400g Chickpea tin, drained
- 200g baby Plum Tomatoes
- 200g Feta, cut into strips
Dressing
- 2 tbsp Olive Oil
- 1/2 tsp Cayenne Pepper
- 1 tsp Smoked Paprika
- 1 tbsp Lemon Juice
- 2 Garlic Cloves, Sliced
- 2 tbsp Honey
Other
- 1 tsp Black Sesame Seeds
Instructions
- Add the Onions, Chickpeas, Tomatoes and Feta to a baking tin.
- Mix the ingredients for the Dressing in a small bowl. Pour on top of the Vegetables and Feta and mix through.
- Bake at 200 C/Gas Mark 7 for 15 minutes.
- Sprinkle over Sesame Seeds.
Storage
This Tray Bake stores well in an airtight container for up to 3 days.
How to Serve
Serve with Toasted Pitta Triangles. To make them, cut 2 Pitta Bread into triangles, drizzle with Olive Oil and bake at 220 C/Gas Mark 7 for 10 minutes. You can flavour the Pitta Chips with Garlic Salt, Cumin, Cayenne Pepper and Smoked Paprika if you like. Just add a little of each and mix well.
