Kunafa is a traditional Middle Eastern dessert made with thin noodle-like pastry soaked in sweet, sugar-based syrup.
Kunafa cups are a convenient and individual serving version of this delicious dessert.
They are typically made by layering the shredded or thinly spun wheat dough (kataifi) in small cup-shaped molds, and then baking or frying until golden brown and crispy.
Ingredients
Syrup
- 120g Caster Sugar
- 75ml Water
- 1/2 tsp Lemon Juice
- 1 Roohts Cinnamon Quill
- 2 Cardamom Pods
- 1/2 tsp Orange Blossom or Rose Water
Pastry
- 225g Kataifi pastry
- 120g Ghee
- 85g Ricotta cheese
- 170g grated Mozzarella cheese
Garnish
Pistachios
Rose Petals
Instructions
Preheat the oven to 180 C.Cut Kataifi Pastry and then shred using your hands.
You can add some Orange food colouring at this point.
Brush some melted Ghee into each hole of a mini cupcake tray, coating the sides too.
Scoop 3 - 4 tbsp of Kataifi Pastry into each hole and pack it in with a spoon to create a hole
Add about a tablespoon each of Mozzarella and Ricotta.
Top with more Kataifi pastry and press down.
Place in oven for about 10 - 12 minutes until golden brown.
Make the syrup by placing all the ingredients for the Syrup in a small pan over medium heat.
Simmer for 3 minutes.
Set aside to cool,
Place a tray on top of the Kuanafa and carefully flip over to unmold.
Spoon 1 1/2 tbsp of Syrup over each Kunafa and serve.
Garnish with Pistachios and edible Rose Petals.
Variations
If you are able to find it, to make an authentic Palestinian version use Nabulsi cheese (without black seeds) and Ackawi Cheese instead of Ricotta.
Serving Suggestion
Serve as a Dessert with a cup of your favourite hot drink.
