A recipe for a nutritious Cereal Bar packed with dried Fruit, Nuts and Seeds. With just a few simple ingredients and a little bit of time, you can create wholesome and satisfying bar that is perfect for breakfast or a quick snack.
Ingredients
- 1 1/2 Cups rolled Oats
- 1/2 cup chopped mixed Nuts
- 2 tbsp Pumpkin Seeds
- 1 tbsp Sunflower Seeds
- 1/4 cup Desiccated Coconut
- 1/2 cup chopped Dates
- 1/2 cup Sultanas
- 1/2 tsp Cinnamon Powder
- 1 tsp Chia Seeds
- Pinch Roohts Pink Salt
- 1 tbsp Chocolate Chips
- 120g Honey
- 175g Smooth Peanut Butter
Instructions
Preheat the oven to 160 C/Gas Mark 4.
Line a 20cm square baking tin with baking paper (make sure to leave overhang so it is easy to lift the bars out later).
Spread the Oats, chopped mixed Nuts, Pumpkin Seeds, Sunflower Seeds and Coconut on a baking tray. Bake for 10 minutes.
Place in a bowl and mix in Dates, Sultanas, Cinnamon, Chia Seeds, Pink Salt and Chocolate Chips.
Heat the Honey and Peanut Butter in a pot over medium heat and bring to a gentle simmer and simmer for 2 - 3 minutes stirring constantly, then remove from the heat.
Pour over the Oats and mix. This will take some effort!
Tip the mixture into the tin and press firmly into the pan.
Place in the fridge to set for 2 hours.
Cut into 8 bars.
Storage
Store in an airtight container once cooled, in the fridge if it's warm where you are. It will still be crunchy 3 weeks later!
Variations
Honey – Use Maple syrup instead.
Peanut Butter - Use Almond or Cashew Butter instead.
For a crunchy version, place in an oven at 160 C for 25 minutes before cutting into bars.
