Courgette fritters are delicious and easy-to-make. They are perfect as a snack, side dish, or even a light main course. Here we use Roohts Pakora mix to add aroma and flavour to the Fritters.
Ingredients (Makes 20)
- 3 Courgettes, grated
- 1 Carrot, grated
- 1 Medium Onion, sliced
- 3 Spring Onions, sliced
- 4 Garlic Cloves, crushed
- Handful Parsley, chopped
- 200g Cheddar Cheese, grated
- 3 Eggs, Whisked
- 4 tbsp Roohts Pakora Mix
- Salt and Pepper
- Sunflower Oil, for frying
Instructions
- Place the grated Courgettes in a colander over a bowl and sprinkle with Salt. Set aside for 15 minutes then wrap the Courgettes in a Muslin cloth or Tea towel and squeeze to remove as much water as you can.
- Add to a bowl with the remaining ingredients and mix to combine.
- Shape into Fritters.
- Heat Oil in a Pan and shallow fry the Fritters until golden brown on both sides. Remove to a plate lined with kitchen paper.
Variations
Use Feta in place of the Cheddar.
Add other Veg such as Corn or grated Squash.
