Courgette and Cheese Fritters Recipe

Courgette fritters are delicious and easy-to-make. They are perfect as a snack, side dish, or even a light main course. Here we use Roohts Pakora mix to add aroma and flavour to the Fritters.

Ingredients (Makes 20)

  • 3 Courgettes, grated
  • 1 Carrot, grated
  • 1 Medium Onion, sliced
  • 3 Spring Onions, sliced
  • 4 Garlic Cloves, crushed
  • Handful Parsley, chopped
  • 200g Cheddar Cheese, grated
  • 3 Eggs, Whisked
  • 4 tbsp Roohts Pakora Mix
  • Salt and Pepper
  • Sunflower Oil, for frying

Instructions

  1. Place the grated Courgettes in a colander over a bowl and sprinkle with Salt. Set aside for 15 minutes then wrap the Courgettes in a Muslin cloth or Tea towel and squeeze to remove as much water as you can.
  2. Add to a bowl with the remaining ingredients and mix to combine.
  3. Shape into Fritters.
  4. Heat Oil in a Pan and shallow fry the Fritters until golden brown on both sides. Remove to a plate lined with kitchen paper.

Variations

Use Feta in place of the Cheddar.
Add other Veg such as Corn or grated Squash.
