Talbina, Date, and Banana Loaf is a wholesome and delicious treat that combines the natural sweetness of Dates and Bananas with the comforting warmth of Talbina. Serves 8 - 10
Ingredients
200g Dates, pitted
150g Light Brown Sugar
50g Dark Brown Sugar
60g Butter, diced
180ml Water
100g Talbina
75g Self Raising Flour
1 tsp Bicarbonate of Soda
1 Banana, mashed with a fork
1 Egg
20g Cocoa Powder
Pinch Salt
65g Walnut halves, dry roast in a pan for a few minutes, then chop
Instructions
Preheat the oven to 180 C/350 F/Gas Mark 4.
Chop the Dates into small pieces and add to a pot with Light Brown Sugar, Dark Brown Sugar, Butter and Water. Bring to a boil, then remove from the heat.
Add Talbina, Self Raising Flour and Bicarbonate of Soda to a large bowl.
Pour in the Date mixture and stir in.
Add the Mashed Banana and Egg and mix through.
Fold in the Cocoa Powder, Salt and roast Walnuts.
Add to a lined loaf tin and bake for 40 - 50 minutes.
Variations
Use Coconut Sugar or Date Sugar in place of the Sugars mentioned.
Add Chocolate Chips.
