Greek Feta Salad

Transport yourself to the sunny shores of the Mediterranean with this vibrant and refreshing Greek feta salad.

Bursting with the flavours of ripe tomatoes, crisp cucumbers, tangy olives, and creamy feta cheese, this salad is a delightful combination of textures and tastes. Whether you're looking for a light and healthy lunch or a vibrant side dish, this Greek feta salad is sure to please.

Ingredients

  • 2 large Tomatoes, diced
  • 1 Cucumber, seeds removed and sliced
  • 1/2 Red Onion, thinly sliced
  • 85g Kalamata Olives, pitted
  • 180 g Feta cheese
  • 2 tbsp extra virgin Olive Oil
  • 1 tablespoon Lemon Juice
  • 1 teaspoon dried Oregano
  • Salt and Pepper to taste

Instructions

In a large mixing bowl, combine the diced tomatoes, cucumber, red onion and Kalamata olives.

In a small bowl, whisk together the extra virgin olive oil, lemon juice, dried oregano, salt, and pepper to create the dressing.

Pour the dressing over the salad ingredients in the mixing bowl. Gently toss the salad to ensure all the ingredients are coated with the dressing.

Add Feta on top of salad.

Let the Salad sit for about 10-15 minutes to allow the flavours to meld together.

This will enhance the taste and texture of the salad.

Serve the salad chilled, and adjust the seasoning with salt and pepper if needed.

Variations

Crumble the Feta instead or chop it into cubes.

You can also bake the feta with a drizzle of Olive Oil, 1/2 clove of Garlic sliced and a pinch of Chilli Flakes at 200 C/390 F for 10 minutes.

Serving Suggestion

Serve with Pitta Chips to make a complete meal.

Storage

Store leftovers in an airtight container in the fridge for up to 3 days.
