Greek Inspired Aegean Salad Recipe

Ingredients (Serves 4 as a side)

Salad

  • 1 heart Romaine, chopped
  • 1/2 Red Onion, sliced
  • 1/2 cup baby PlumTomatoes, chopped in half
  • 1/2 Cucumber, cut into half moons
  • 1/2 cup Chickpeas from a tin, drained and rinsed
  • 1/4 cup Kalamata Olives
  • 50g Feta, crumbled

Dressing

  • 1 Garlic Clove, crushed
  • 1/2 tsp Dry Oregano
  • 1/4 tsp Cayenne Pepper
  • 2 tbsp Lemon Juice
  • 1 1/2 tbsp White Vinegar
  • 2 tbsp Extra Virgin Olive Oil
  • 1/4 tsp Dijon Mustard
  • 1/8 tsp Salt
  • Good Pinch of Black Pepper

Instructions

  1. Chop all the Vegetables and add them to a bowl.
  2. Add all the ingredients for the dressing to a bowl and whisk together.
  3. Pour over the chopped Vegetables and mix to combine.

Storage

This Salad will keep well in an airtight container for 2 days. If the dressing is tired separately, it will last for up to 4 days.
