Harissa Pumpkin with Garlic Tahini Dressing Recipe

Pumpkin wedges are a delicious and versatile way to enjoy the earthy sweetness of pumpkin. Roasted to perfection, these wedges become caramelised on the outside while remaining tender on the inside. They're perfect as a savoury side dish and the Harissa marinade and Garlicky Tahini. Dressing complements the Pumpkin perfectly.

Ingredients (serves 4)

  • 1 Kg Pumpkin, peeled and cut into wedges

Marinade

  • 1 heaped tsp Harissa Paste
  • 1 tsp Smoked Paprika Powder
  • 1 tsp Coriander Powder
  • Salt and Black Pepper
  • 3 tbsp Oil

Green Tahini Garlic Dressing

  • 50g Tahini Paste
  • 2 tbsp Lemon Juice
  • Pinch Cumin Seeds
  • 1/2 tsp Salt
  • 50g Coriander Leaves
  • 2 cloves Garlic

Instructions

  1. Preheat the oven to gas 6, 200C, 395 f.
  2. Add the Pumpkin to a bowl with the remaining ingredients and rub the marinade into the Pumpkin.Place in a lined oven tray. Roast for 25-30 minutes.
  3. Make the dressing by combining all the ingredients for the Dressing in a blender and pulse till combined.
  4. Place Pumpkin wedges on a platter and drizzle over the dressing.

Variations

Add some chopped Feta to the wedges.
