Our Sweet Potato Salad is a vibrant, nutritious salad that combines the natural sweetness of roasted sweet potatoes, crispy chickpeas with salad ingredients and a creamy Tahini dressing dressing. Perfect as a hearty side dish or a light main course, this salad is sure to become a favourite at your table.
Ingredients (Serves 4)
- Sweet Potato and Chickpeas
- 1 large Sweet Potato, peeled and cut into small cubes
- 400g Chickpeas
- 3/4 tsp Cayenne Pepper
- 1 tsp Smoked Paprika
- 3/4 tsp Garlic Granules
- Large pinch Salt and Pepper
- 2 tbsp Olive Oil
Salad
- Small Handful curly Parsley, chopped
- 1 small Red Onion, sliced
- 60g Feta, cut into small cubes
- Handful Pomegranate Arils
Dressing
- 4 tbsp Plain Yoghurt
- 1 tbsp Tahini
- 1 Garlic Clove, crushed
- 1/2 Lemon, juice only
Instructions
- Combine the Sweet Potato and Chickpeas with Cayenne Pepper, Smoked Paprika, Garlic, Salt, Pepper and Olive Oil in a large bowl.
- Spread out onto an oven tray and bake at 200 C for 25 - 30 minutes.
- Add to a bowl along with Parsley, Red Onion, Feta and Pomegranate.
- Make the dressing by combining Yoghurt, Tahini, Garlic and Lemon in a small bowl. Whisk to combine. Add more Lemon Juice or some Hot Water if it is a little thick. Pour over the Salad and mix through.
Variations
Add fried Halloumi instead of Feta
