How to make Talbina with milk
1. Combine the barley flour and milk
Add 2 tablespoons of barley flour to a small saucepan.
Gradually pour in ¾ cup of milk, whisking or stirring as you go.
Make sure the flour is well incorporated before turning on the heat. This helps prevent lumps.
2. Cook gently
Place the saucepan over low heat.
Cook for around 2–5 minutes, stirring regularly.
The barley flour will gradually thicken the milk and turn into a smooth, creamy porridge.
Don't be tempted to cook it over high heat. Gentle cooking gives you a smoother consistency and helps prevent the milk from catching on the bottom of the pan.
3. Adjust the consistency
Talbina thickens as it cooks and will thicken a little more as it cools.
If it becomes too thick, simply add another splash of milk and stir.
For a thinner, more pourable Talbina, use closer to 1 cup of milk.
4. Serve
Pour the warm Talbina into a bowl.
Add your favourite toppings and enjoy straight away.

Whole milk - Gives you the richest and creamiest result.
Semi-skimmed milk - A good everyday option that still produces a creamy bowl.
Skimmed milk - Creates a lighter consistency.
Oat milk - Works particularly well if you want a naturally creamy plant-based version.
Almond milk - Adds a subtle nutty flavour.
If using plant milk, choose an unsweetened variety if you don't want the finished Talbina to be overly sweet.
How thick should milk Talbina be?
That is completely up to you.
Some people like Talbina almost soup-like, while others prefer a thick porridge.
Start with ¾ cup of milk and add more towards the end if necessary.
Remember that the Talbina will continue to thicken slightly once it is off the heat.
Can I add honey?
Yes.
Honey is traditionally used to sweeten Talbina and works particularly well with the creamy barley and milk.
Add it once the Talbina has been cooked and adjust according to taste.
You can also use dates, date syrup or maple syrup.
Can I make Talbina with milk and dates?
Absolutely.
For a naturally sweet bowl, chop one or two dates and stir them through the warm Talbina.
You can also blend the dates with some of the milk before cooking if you want the sweetness distributed throughout the porridge.
Can I add spices?
Yes.
Cinnamon and cardamom are particularly good with Talbina.
You could also add Vanilla, Nutmeg, Cocoa, A little orange zest.
Start with a small amount because barley has a delicate flavour that can easily be overwhelmed.
Can I make Talbina with milk ahead of time?
Talbina is best eaten fresh because it thickens considerably as it cools.
If you do have leftovers, transfer them to an airtight container and refrigerate for up to 1 day.
When reheating, add a splash of milk and stir well. Warm gently on the hob or in the microwave until creamy again.
Is Talbina better with milk or water?
Neither is necessarily better. Milk gives Talbina a creamier, richer texture and adds protein and other nutrients. Water creates a lighter bowl and lets the flavour of the barley come through more clearly. Try both and see which you prefer.
Can I eat Talbina with milk every day?
Yes, Talbina can be enjoyed regularly as part of a varied diet.
There is no requirement to eat it every day, though.
