Barley flour

2 tablespoons finely ground barley flour 

Note - For the smoothest Talbina, we use a fine barley flour rather than coarsely ground barley.

Water

¾–1 cup (190–250ml) water

Start with ¾ cup and add more towards the end if you prefer a thinner consistency.

How to make Talbina with water

1. Add the barley flour

Place 2 tablespoons of barley flour into a small saucepan.

2. Add the water

Gradually pour in ¾ cup of water, stirring continuously.
Mix thoroughly until the flour has dispersed and there are no obvious lumps.

3. Cook gently

Place the saucepan over low heat.
Cook for around 2–5 minutes, stirring regularly.
As it cooks, the barley flour will absorb the water and the mixture will gradually become creamy and smooth.

4. Adjust the consistency

If your Talbina is thicker than you like, add a splash more water and stir.
For a more traditional, thinner consistency, you may prefer to use closer to 1 cup of water.
Remember that Talbina will thicken slightly as it stands.

5. Serve

Pour into a bowl and add your favourite toppings.
